Ramon Buckwheat Noodle Bowl with Veggies


Ramen Buckwheat Noodle Bowl with Veggies

  • 4 Cups low sodium chicken or veggie broth
  • 1 cups of diced cooked chicken or shrimp
  • 1 cup of shredded carrots
  • 1 cup of chopped broccoli
  • 1/2 cup of water chesnuts
  • 2 Tablespoons of fresh ginger grated
  • 2 Tablespoons of Sesame Oil
  • 2 Tablespoons of Soy Sauce
  • 2 cups fresh spinach
  • 6 oz of Ramen Buckwheat noodles
  • 1 hard boiled egg


  1. In large sauce pan heat sesame oil, add the garlic and ginger stir 2 minutes
  2. Add 2.5 cups of water carrots, broccoli, and broth-bring to boil then simmer 6 minutes
  3. Add cooked chicken, water chestnuts, continue to simmer for 5 minutes or until noodles are ready
  4. Add in two cups of spinach let wilt for about 2 minutes
  5. Spoon into bowls, divide egg and place 1/2 in each bowl
  6. Enjoy!
