Feta Broccolini Almond Whole Wheat Flatbread Pizza

Made with love, Broccolini Almond Feta Flatbread. Kids love the “little trees”

Healthy whole wheat flatbread creates a crunchy satisfying pizza crust with less calories and fat

Ingredients

2 Whole Wheat Lavash Flatbread’s

2/3 cup of Trader Joes’s Marinara Sauce

2 cups of shredded mozzarella low fat

1/2 pound of broccolini

1 teaspoon of olive oil

1/2 cup of crumbled feta cheese

1/4 cup of toasted sliced almonds

Instructions

Pre-heat oven to 475 degrees. Position rack in the middle of the oven

Lightly brush flatbread’s  with the olive oil covering the surface leaving an outer edge (crust)

Toast on middle rack until lightly brown on the edges. Take out of oven and place on cookie sheet or baking stone

Spoon the marinara sauce spreading evenly over the surface

Divide the mozzarella cheese and feta evenly between the two flatbreads

Prepare and blanch the broccolini:

Trim the broccolini of the large stems, leaving the top 3 to 4 inches

In a large saucepan add 2-3 inches of water, once boiling, add the broccolini, bring the water back to boiling and cook until the broccolini turns bright green. (about 1 minute)

Drain the broccolini  and place on towel, blotting any excess moisture, add a salt and pepper to taste, toss with remaining olive oil until coated. Arrange the broccolini over the two flatbread’s.

Sprinkle the almonds on top and bake the flatbread’s in the over until crust is golden and the cheese is bubbly.

Place on cutting board. Cut into individual pieces and serve

Notes

Optional items to add:

Red pepper flakes

Fresh basil

Pre-cooked chicken or shrimp
